Ten kitchens burn through ghee, basmati, and chicken at ten different speeds, and stock is checked the traditional way: a cook shouting down a phone at 11pm. Every month, some branch runs out of a bestseller on a Saturday.

The Reorder Bell reads the same stock sheets the branches already fill and rings early: days-of-cover per item per branch, with a ping when anything crosses its reorder line — days before the Saturday, not during it.
